World Champion and Master Pastry Chef, Olivier Bajard , recipient of the Chevalier dans l'Ordre des Palmes Académiques (The French National Government Award for Education), will present his philosophy on flavor, texture and degustation. Students will then incorporate these ideas as they create elegant desserts including entremets, tarts, “travel” cakes, macaroons and some of Chef Bajard’s house specialties.
